The storage environment is most important. In a heated/cooled situation I would just back off the valve springs and lightly cover to keep the dust off after a light coat of WD40. Storing where temps vary is much more difficult as when a cold parts heats up it will sweat and rust. An occasional turn over would be good.

We recently had a cast iron motor come to the shop, had been stored in a bag in an unheated garage for a year and it looked like it had been fished out of a creek, covered with rust.
