We run the same clutch in our A/F car (.218 wire size springs). It is, indeed, that sensitive to stall adjustment. We make adjustments in 1/2 flat increments.
1/2 flat correspond to about 30g weight change on the fingers (3/8" thick).
We set it up to idle at 2600-2650 free wheeling and pull down to 2000-2100.
It usually takes 2-3 times of starting the car to get it set initially after pressure plate had been disassembled, but after that is stays pretty consistent.
Call me if I can be of any help.
