I have seen teams change to thicker or thinner head gaskets between runs. I am curious what they are trying to do that changing tranny ratio's & clutch won't change?

they are using the thickness as a tuning tool. same as adjusting timing or fuel. If the air has changed or track conditions.

it all depends on what you're trying to change or compensate for.

ie, you're in the heat of summer, tracks getting slicker. with a corrected alt of 4000 ft, your baseline is say 1800 ft. now one thing you can do in the summer to compensate for power loss is more compression. if you're going to denver, you're probably going to max out your compression.

generally .010 on a head gasket equates to about a .25 pt change in compression.

Is there a minimum thickness you can get away with providing there's enough valve clearance?

.042 is about as thin as you want to go

how thick can you go before the o-rings become useless and the gaskets won't seal to the sleeves?

I guess the real question is compression. Our current compression is 9.8:1 with a .062 gasket. I can get that to 10.25 with a .045 gasket. What is a good compression ratio to shoot for on a PSI Large chamber TAD engine?
