The correct way to tighten a tapered roller bearing is to assemble, and while spinning the wheel, torque castled nut to approx 15- 20 ft-lbs. Now with out moving the wheel or distriburing the wheel bearing, back off the nut 1/2 turn or no tension (I use channel locks pliers), then with two fingers tighten nut(approx 5 inch-lbs torque or just snug). Install cotter pin in hole or if it does not line up with the castled nut, back off nut until it lines up with cotter pin. I use synthetic grease (long fiber). To check just put some between thumb and index finger and pull apart. Should be a long fiber 1" or more and high temperature wheel bearing grease. Do not forget to pack bearing grease through the bearing up the roller from wide bearing bottom. Hope this helps.
